Well, it doesn’t go bad in our household! We use A LOT of maple syrup in our house! If you opened our pantry, it would be hard to find any other sweetener. We use both maple syrup and maple sugar in most of our dishes that require a sweetener. You can also find honey… but that’s another conversation!
We know that not everyone has converted their white cane sugar into maple. We have high hopes that you will!! But in the meantime, that means some people are gifted or purchase maple syrup and it lasts a LONG time. How many of you have gone to reach for the syrup and there are floaters! Yes, floaters!! I’m talking about MOLD. Or perhaps it smells like it’s fermenting?! Is that you? If so… read on!
The big question is… Does maple syrup go bad?
For years, people said NO! Maple syrup lasts forever. However, there is a new answer now. And it’s Yes! Absolutely! Maple Syrup can go bad! According to the USDA, maple syrup should be stored in the pantry for about one year. Once opened, maple syrup should be stored in the refrigerator – and even then, it’s again, good for one year!
How can you tell if it has gone bad?
There are a few ways, really:
- It molds!
- It smells like alcohol, fermentation or vinegar.
- The plastic jug has expanded or the glass jar hisses when you open it.
These are all signs that your maple syrup has gone bad. There is some good news, though! Some maple syrup can be fixed! Check out our blog post about fixing moldy syrup.
In the meantime, please remember the Vermont Maple Sugar Makers Association recommends storing unopened, maple syrup in a cool place. For long-term storage, you may store maple syrup in the freezer. Surprisingly maple syrup will not freeze solid!
